Description

Le Pigeonnier Viognier comes from a single-vineyard, 2.5 acres in size, located
in the Côte du Lot. The vines are eleven years of age. The yields are low, about 25 hl/ha.
The distinctive terroir creates an optimum growing environment for Viognier. Perched
at a high elevation, the vineyard soil is Kimmeridgian - comprised of alternating
layers of dense chalk and a soft, permeable clay encrusted with marine fossils (Oestra
Virgula). The vineyard experiences warm temperatures during the day, followed by
cooling nights. All of these elements lead to a Viognier of aromatic mineral complexity.

Winemaking Notes:
The grapes are meticulously picked by hand. Following pressing in an oxygen-free
environment, the juice is racked to remove the heavy lees, and placed in oak barrels
for alcoholic fermentation, with fermentation typically lasting 10 days at 64 degrees
Fahrenheit. (40% new French barrels are from Ermitage and Francois Frères, 60% are
from Saury, and two years of age.) When the alcoholic fermentation is complete, the
wine is stirred twice a week for nine months.

Tasting Notes:
Le Pigeonnier Blanc has a golden yellow color with a green hue. The first nose is bright
and vibrant, dominated by apricot and floral flavors. Swirling, the wine releases an
explosion of aromas with white fruits (apricots, peach, and pineapple) and floral notes
(rose and white flowers). The nose is expressive, complex and elegant. In the mouth,
the wine shows it’s intense character at the attack, following with a beautiful maturity.

On the palate it is superbly well shaped and balanced, with freshness, concentration
and length. Apricot and pineapple, white flowers, rose and smoky notes interplay with
aromatic complexity.
